These are fun to make and rewarding to eat.

10 oz. packages frozen chopped spinach, thawed and drained
1 bunch green onions, including about 3" of the tops, finely chopped
2 tbsp. dried dill weed
1/2 lb. feta cheese crumbled
3 eggs beaten
Salt to taste
1 cup butter melted
1 lb. filo sheets, thawed

Combine spinach, 1/3 cup olive oil, onions, dill, feta and eggs in a bowl. Season to taste with salt and set aside. Stir 1/2 cup olive oil into melted butter. Place 1 sheet of filo on clean work surface and brush with butter oil mixture. Fold sheet into thirds, brushing each surface with butter/oil. Place 1 tbsp. spinach mixture on one corner of filo strip. Fold corner over filling forming a triangle. Continue to fold, flag fashion, up strip retaining triangle shape. Last fold may require trimming in or tucking excess dough. Brush triangles with butter/oil and place on baking sheet. Bake at 350 degrees 20-30 minutes, or until puffed and golden brown. Makes about 30.
