Pita Flatbread














You can use these as a pizza base or for dipping into sauces.

1 1/2 c warm water
1 1/2 tbsp sugar
1 pkt Yeast
Let sit 5 minutes until foamy

2 c bread flour
1/4 c whole wheat flour
1 1/2 tsp salt
Blend

Add 2 tbsp olive oil to liquids
Stir in dry ingredients until it becomes shaggy dough

Turn out on dusted surface and knead for 15 minutes until smooth and slightly sticky.

Transfer to bowl coated with olive oil.  Coat dough with olive oil.  Cover and let rest 2 hours.

Turn out to work surface, divide into 12 pieces, roll into balls by stretching top to bottom like making dumpling.

Place about an inch apart, cover and let rise.  Roll out until 1/3" thick.  Place on sheet pan and bake for 5 minutes.
