Hummus & Tahini


Not only is this good, it's good for you.

For the Hummus
1 can chickpeas
1/4 cup lemon juice
1/4 c tahini
roasted garlic to taste
2 tbsp olive oil
1/2 tsp cumin
salt to taste
2-3 tablespoons water
dash ground paprika or sumac for serving

Combine tahini and lemon juice and process for 1 minute.  scrape sides and process 30 seconds more.  Add olive oil, garlic, cumin, 1/2 tsp salt & process 30 seconds. 

Drain chickpeas & rinse. Add half of the chickpeas and process 1 minute.  Scrape sides then process 1-2 minutes.  If it's too thick add 2-3 tbsp water.  Serve with a drizzle of olive oil on top.

For the Tahini
1 tsp sumac
1 to 1 tahini
1 to 1 water
lemon juice of 1 lemon
2 cloves garlic
salt & pepper
