Debbie made these for Jeff (who was diabetic) and they were a perfect cure for him.
Preheat oven to 375
2 sticks of unsalted butter - room temp.
1 cup packed dark brown sugar
1/2 cup refined white sugar
1 large egg
1 t. vanilla
1 cup all purpose flour
1 t. baking soda
1/4 t. salt
1 t. ground cinnamon
1/8 t. (approximately) grated nutmeg
3 cups oatmeal (quick or reg OK)
1 16 oz package Ghirardelli chocolate chips
1 cup chopped walnuts
Mix butter with sugar until creamy. Add egg, mix. Add vanilla, mix.
Add 6-10 dry ingredients, mix well. Add remaining ingredients (oatmeal, chocolate, nuts) one at a time and stir until well mixed.
Using tablespoons, drop onto cookie sheets 12 to a sheet. Bake for 12-13 minutes. Cool 1 minute and finish cooling on wire racks.
These freeze very well, so I make the entire batch and freeze half.
Makes 45 cookies
