Bamya Okra and Tomato Stew (Mediterranean style)














Buy small okra...you'll have less slime.

6 okra
1/4 cup each Rice Wine Vinegar / White vinegar
Juice of 1 lime
Juice of 1 small orange
olive oil, 1 tbsp 
1/2 jalapeno, chopped into rounds
Red onion, one 1/4" slice of whole onion
Garlic sliced like slivered almonds, 4 cloves
Fresh parsley
Allspice, 1/4 tsp
Coriander, 1/4 tsp
Paprika, 1/4 tsp
Salt, pinch
Pepper, pinch
6 small canned tomatoes and 1/2 large sliced Tomato

Using all ingredients except tomato, marinade whole okra for 30 minutes.  
Remove okra, onion, jalapeno, and garlic from marinade.  Pan fry the okra, onions, garlic and jalapeno in a pan with olive oil.  Add more allspice, coriander, paprika, salt and pepper (to taste), and cook for another 5-7 minutes.  Add tomatoes more allspice, coriander, paprika, salt and pepper (to taste).  Bring to a boil, cover, and lower heat to a simmer. Cook for 4 minutes and serve.
