Pasta Salad









Mark said this is the best pasta salad he's had, but added that he would have liked to have ham. It cost about $30 but makes about 12 servings, and can be a meal in itself.

Fusilli pasta (the squirrely ones, looks a lot like panini), one bag cooked al-dente
Chopped vegetables (use a bunch of your favorite ones).  We used:
broccoli; tips, and sliced stems (blanched 2 minutes)
2-3 carrots, some cut into julienne strips, some cut into little chunks
red & yellow bell peppers cut into chunks
1 can hearts of palm, cut
1 small or medium can sliced black olives (so you don't have to)
green onion, one bunch, sliced
jicama, one small cut into chunks
green zucchini, cut into chunks
1 pkg. cherry tomatoes, cut in half
1 bunch basil, chopped
1/4 bunch cilantro chopped
1 pkg. crumbled or chopped feta cheese
¼ cup grated Parmigiana/Reggiano
1 pkg. pepperoni sliced
ham (about 1 ½ cup cut in chunks)
1 small container marinated artichoke hearts
3 hard boiled eggs cut into cubes
salt, pepper, dill
your favorite Italian dressing (we used Cindy's Kitchen rosemary& garlic Italian from Whole Foods)
 
Cook the pasta, boil the eggs & blanch the broccoli.  Combine everything, stir in the Italian dressing, enjoy!
